Heat the olive oil in a large skillet over medium heat.
Keep the skillet handle turned inward while cooking.
Add the onion and green bell pepper. Cook for 4 minutes, stirring often, until softened.
Stir in the lentils, tomato sauce, ketchup, water, mustard, garlic powder, salt, and black pepper.
Simmer for 10 to 12 minutes, stirring often, until thick and saucy. Lightly mash some lentils with the spoon for a thicker texture.
Stir carefully to prevent hot sauce from splattering.
Warm the vegan hamburger buns if desired.
Spoon the lentil mixture onto the buns and serve warm.
